Apple pie
Basic stuff you'll need:
6oz Manx plain flour
2ox Manx butter
2oz lard (or more Manx butter)
2 to 3 tablespoons of water
2 or 3 large cooking apples
6 to 8 whole cloves (optional)

A pie dish.

How to cook it:
1. Peel the apples; core them and cut into large dice. Pop them to boil in an inch or two of water. Let them simmer until the apple is pulpy. (Add cloves for flavour if you like).

2. Seive your flour, and roughly chop in the butter and lard.

3. Rub the butter and lard into the flour using your thumbs to rub the flour against your fingers. Get it to a kind of biscuit crumb stage.

4. Add a couple of tablespoon of water and use a wide flat knife to gather the crumbs together in a loose dough. Add another splash of water if needed.

5. With your hands gather the dough into a decent ball, then split in two - about 60% of the dough for the base, and 40% for the top.

6. Roll out the dough on a floury surface - but not too much - until you've got nice circles.

7. Place the base into a greased pie plate.

8. Add the apple pulp - then use some of the juice to wet the side of the pastry - then pop the top on. Use your fingers to gather the edges together.

9. Pop your pie into a pre-heated oven (about 150oC) and let it bake for around 20 minutes.

10. Eat and enjoy!


Chocolate mousse
Serves 4

Basic stuff you'll need:
6 oz Bournville Dark chocolate
2 tbls milk
3 Manx free range eggs - separated

How to cook it:
1. Break the chocolate into a pyrex bowl and melt it slowly with the milk over a low heat.

2. Separate the eggs. Stir the egg yolks and leave to one side.

3. Beat the egg whites until they're very stiff

4. Mix the egg yolks into the melted chocolate, having let it cool for a few moments.

5. Beat this mixture into the egg white, then put into serving dishes to set.

6. Setting should take about two hours in the fridge - you may then like to add fresh whipped cream and some grated chocolate to serve.

7. Don't eat it all at once!
